I have never made a pumpkin cookie before and certainly learned something from this cookie. And that would be how to intensify a flavor in a cookie without adding anything … boil it!
Using canned pumpkin and boiling it down to remove the moisture and intensify the flavor.
The pecans added a nice sweet nut flavor without being too nutty. This would be a great Thanksgiving cookie to marry the traditional pumpkin and pecan pies in one bite.
I will say though, the pumpkin aroma wafting through the kitchen was stronger than the actual pumpkin flavor in the cookie. I thought that it would be more of the pumpkin pie forward pumpkin flavor, but it was quite subtle and married with the pecans into a much milder flavor.
Maybe I could have reduced the pumpkin even more for extra flavor. I’ll add that to my notes!
