Sidenote to the Chocolate Chip Cookie

Now, I am only into my first few cookies and have come to the harsh realization that I will be producing copius amounts of baked goods. What in the world am I going to do with soooo many cookies? Here’s a thought…ice cream sandwiches. It’s a two-fer. Score one for me!!!

I did learn something (of course not the hard way, these are cookies of course.) It’s not a good idea to construct the ice cream sandwich and try to eat it  right away. Major. Mess. Note to self – freeze the sandwich at least for an hour, maybe overnight. Success!
