Freedom Treasure Cookies

This is a definitely a cool recipe.

You look in your pantry and pull out what you already have that would mix in a cookie and taste good. (No…not canned goods or any weird stuff.) The recipe gives porportions so that you come out with a proper ratio of dough and add ins.

I decided to revisit the Oatmeal Rasin cookie that I had already made. I was looking more for that cinnamony, raisiny old school cookie. With a twist!

My found treasure was unsweetened coconut, and it made a great addition to the cookie. I did have a dilemma. To toast or not to toast. I chose not and I am glad. The coconut self-toasted while baking (pretty nifty invention, if I do say so myself.)

The cookie had this little surprise crunch from the coconut and kind of a mysterious non-oatmeal flavor. Even my Cookie Monster tasters were pleasantly surprised. The cookie was crunchy on the outside and kept that nice soft center. I think that next time I might go for a bigger cookie, these were a heaping tablespoon, I would definitely try doubling and flattening with a shorter cooking time to keep them even softer.

Now I’m really feeling like a baker (in the junior league of course) calling out my next iteration of a cookie!
