Oatmeal Favorites

I have to admit, this is not the cookie that I was expecting…in a good way!

My expectation was for more of a traditional Oatmeal cookie, soft and a little textural from the oats. My surprise was that it was way more than that.

It is really a Chocolate Chip meets Oatmeal Rasin in the best of both worlds. Loads of chips, rasins and walnuts makes every bite a little different taste sensation. The outside stays a little crisp and the inside stays a little moist, perfectly complimenting each other.

One of my “tasters” (that would be my inner circle of Cookie Monsters as I call them) really liked the cookie but asked if I would drop the chips for the next batch. Well, that batch may need to wait! I have a few more recipes to get through before revisiting any of my initial bakes.

One note about The Cookie Bible, and something that I really like is that many of the recipes give a variation to the base recipe. It could be for a crispier cookie, a variation on flavor or swapping ingredients. I did think about trying those options for each cookie but decided against it because it would mean baking like another million or so cookies. (I am definitely thinking about revisiting recipes – but we will save that for another day and another discussion.)
